Veggie Sandy!

This is a really easy recipe and is my ‘go-to’ sandwich! I almost always have everything on hand for this veggie sandy and I make it probably too frequently for myself. But I still haven’t gotten tired of it, so that says something right?

The ingredient list is pretty simple; some avo, cucumber, spinach, tomato, and some spices! Super easy and extremely refreshing!

Prep Time: 5 minutes

Serves: 2

 

Ingredients:

  • 4 slices of bread
  • 1/2 Avocado
  • Handful of fresh spinach
  • 1/2 Tomato
  • 1/4 Cucumber
  • 1 tbsp Olive Oil
  • 2 tsp Italian Seasoning
  • Pepper to taste

 

  1. Slice the tomato and cucumber into thin rounds.
  2. Toast the bread.
  3. Spread the avocado onto 2 different slices of toast.
  4. Pile the spinach on top of the avocado, then stack the tomato and cucumber.
  5. Drizzle  with olive oil and spices.

 

Optional:

You can also add hummus to the other side of the toast for an even creamier sandwich!

If you’ve noticed that with every recipe that I’ve posted that I add a tbsp of oil to the finished product and you’re wondering why, then I will explain!

In order for our bodies to fully digest veggies, it’s easier if they can cling to a fat. So with every veggie recipe, I add some kind of healthy saturated fat at the end to give the veggies something to cling to. The olive oil isn’t actually necessary in this recipe because the avocado has a ton of natural saturated fat in itself, but I personally love the taste of olive oil and italian seasoning drenched over some veggies!
