
I’m not sure if anyone can love sweet potato as much as I do. Put it together with quinoa and some other yummy veggies and I’m in a cloud of joy! This recipe is super simple and is packed full of delicious veggies and spices. The best part is that it’s vegan and gluten free!
Cook Time: 20 minutes Prep Time: 10 minutes Serves: 2-4
Ingredients:
- 1 cup Cooked Quinoa
- 1 Sweet Potato
- 1/2 head of Broccoli
- 6 Okra spears sliced
- 2 Large mushrooms sliced
- 1 Red bell pepper sliced
- 1/2 White onion sliced
- 3 Cloves garlic minced
- 1/2 tbsp Vegan butter
- 1 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tsp Maple syrup
Spices
- 1 tbsp fresh cilantro
- 1 tsp Oregano
- 1 tsp Garam masala
- 1/2 tsp Dill weed
- 1/2 tsp Chili powder
- pepper to taste
- Before anything else, start cooking the quinoa. It should be fully cooked when finished with everything else.
- Cut the sweet potato and broccoli into bite sized chunks and steam them for about 10 minutes or until tender.
- Heat 1 tbsp of sesame oil on a pan at medium – low heat. Add the garlic, onion, okra, mushrooms, and bell pepper. Let sit with a lid, stir occasionally.
- After the broccoli and sweet potato are tender enough to poke with a fork, add them to the main pan.
- Add the soy sauce, maple syrup, and spices.
- Mix the vegan butter into the quinoa when it has finished cooking.
Optional:
Depending on your preference, you can mix the quinoa into the pan with the veggies or you can leave it separate. Whichever you choose, the food is ready!
