
This definitely has to be one of my top favorite sandwiches! Simple to make, and so delicious! All you need is bread, beets, avocado, tomato, spinach/lettuce, and some spices.
(Or make it gluten free and put the same ingredients on a gluten free tortilla for a refreshing wrap!)
Cook Time: 15 minutes Prep Time: 10 minutes Serves: 2-4
Ingredients:
- 4 Slices of bread
- 3 Small beets
- 1 Tomato sliced
- 1/2 Avocado
- Leafy green (I used Spinach)
- 1 tbsp Olive oil
- Italian seasoning
- Pepper to taste
- Slice the beets in half and steam them for about 10-15 minutes. (Until a fork can be stuck through them easily.) May take longer depending on size.
- When beets are close to done, toast the bread. Slice the tomato into thin rounds.
- Spread the avocado onto the toast, stack the spinach and tomato on top.
- Let the beets cool off until you can easily touch them, then slice them into thin rounds. Add the beets to the sandwich. Drizzle 1/2 tbsp of olive oil over both sandwiches, and sprinkle italian seasoning and pepper over them to taste.

There you have it! The beautiful, delicious, vegan BLT!
Optional:
- If you keep Go Veggie Parmesan on hand, I definitely suggest trying that out on this baby! The flavor mixes so well with the beets.
- For a gluten free option, try it out on a gluten free tortilla. I really like this brand.
Notes:
Your beets may take longer to steam depending on size. I bought mine from the farmer’s market and were only about as big as the space between my thumb and index finger. If you have larger beets and would like to cut down on cook time, slice them length- wise in quarters instead!
