
All of the ingredients in this Veggie Ramen Bowl may seem a bit overwhelming, but it is way simpler than it seems. You also do not need to use every single veggie we used; this was more of a “our veggies are going bad and need to be eaten so how many can we throw into one dish” sort of meal. It turned out absolutely amazing though! So feel free to change it up however you like and get creative! Use whatever veggies you have on hand and see what you can come up with, use this recipe more as a guideline.

Ingredients:
- 1 Ramen cake
- Half Carrot thinly sliced
- Mix of Shiitake and Crimini mushrooms (About 6)
- 1/4 Cucumber thinly sliced
- 1/2 Red Bell Pepper sliced
- 2 Chive stalks
- 1/4 head of broccoli
- 1/2 Jalapeno diced
- 3 Large garlic cloves diced
- 1/2 Lime
- 3 Cups vegetable broth
Herbs:
- Pinch of Parsley
- 1 tbsp Cilantro
- 1/8 cup fresh basil
- 1/2 cup spinach
- 1 tsp Dill weed
- 1 tsp Sesame seeds
- Pepper to taste
Sauces:
- 2 tbsp Soy Sauce
- 1 tsp Teriyaki Sauce
- 1 tbsp Vegan Butter
- 1 tbsp Sesame oil
- Prep all of the veggies first to make it easier when throwing everything into the pan. Slice the mushrooms, bell pepper, and chives. Dice the garlic and jalapeno. Cut the broccoli into bite sized pieces. Use a potato peeler to thinly slice the carrot and cucumber. Chop all of the fresh herbs together.
- Set the sesame oil in a large pan on the stove to medium heat. Add the mushrooms, bell pepper, and broccoli. Place a lid on the pan and let sit for about 2 minutes, stir occasionally.
- Add 2 tbsp of the vegetable broth to the pan and replace lid. Allow the veggies to steam for another 2 minutes.
- Add the garlic, carrot, cucumber, and herbs to the pan. Pour in the remaining vegetable broth. Replace lid and let sit for 5 minutes on med-low heat.
- While the veggies sit, prepare the ramen. Follow the instructions on the packet if a different brand is used. I used this brand. In a small pot, bring 2 cups of water to a boil and add in 1 ramen cake. For 1 minute, stir and break up the noodles. Let sit for 3 more minutes until thoroughly cooked.
- Stir the veggies, turn the pan to low heat. Add in the jalapeno, chives, and squeeze one half of a lime over them. Add the soy sauce, teriyaki sauce, vegan butter, and the spices.
- Drain the noodles of any excess water and add to the pan of veggies.
- Mix everything in together, pour 1 tbsp of sesame oil over everything for added health benefits and it’s ready to serve!
